CrossFit Peabody Recipes: UMP Protein Crepe

UMP Protein Crepes
 
For the past 2 years I’ve consistently had UMP ‘pudding’ as my pre-bed snack.
 
Well let me tell you that this recipe takes the cake and is AWESOME!!!
 
UMP Crepe – makes 1 serving
 
Ingredients:
 
1 scoop UMP (my favorites are cookies and cream and vanilla)
4 egg whites or 2 servings egg white liquid egg whites
1 tsp. baking powder
Peanut butter (obviously since it makes everything taste better!)
Jelly (high quality with NO high fructose corn syrup)
 
Directions:
 
Mix together 1 scoop UMP, egg whites and baking powder. Add water to make a pancake like consistency.
 
Using non-stick cooking spray, heat a small pan
 
Place UMP crepe batter in the hot pan.
 
Flip when the top of the crepe is NOT runny
 
Cook fully and top with peanut butter and jelly (or toppings of choice)
 
Cut into 4 quarters and enjoy!!
 
This is seriously AMAZING!!!
